It is the roasting process that transforms the chemical and physical properties of green coffee beans and it is the heat from the roaster that produces the characteristic flavor of the coffees. During the coffee roasting process the green coffee beans will expand and change in color, taste, smell and density. It is the heat that speeds up the chemical reactions that develop and enhance the flavor of the coffees.
As the roasting process begins the coffee beans absorb heat and the color of the green coffee beans changes to yellow and then to varying shades of brown. |

Green Coffee Beans

As the roasting continues, oils appear on the surface of the coffee beans and they take on a shiny appearance. The coffee beans will continue to darken until they are removed from the heat source.
Some coffee beans are suited to being dark roasted, while others may not be. Too much roasting might mask or even eliminate the unique flavors of the coffee beans. Generally
speaking, the longer the roasting time and the darker the coffee bean, the more chance of losing the subtle flavors of the original coffee beans.

Medium Roast Coffee

Each coffee roasting company designs its own "roasting profile" for each type of coffee roasting - light, medium, dark, etc. It is for this reason that a "medium" roast from one coffee roaster might taste differently from the same roast from another company.
Medium or medium-dark roast coffee just might be the best for regular coffee drinking, while a dark roast coffee is better suited for making espresso. |

Dark Roast Coffee

- Light Roast Coffee -- This coffee is light brown in color and there will be no oil on the coffee beans since they are not roasted long enough for the oils to break through the surface.

- Medium Roast Coffee -- This coffee is a medium brown in color and will have a stronger flavor. There will also be no oil on the coffee beans. This roast is commonly referred to as the "American Roast".

- Medium - Dark Roast Coffee -- This coffee is rich and dark brown in color. There will be oil on the surface of the coffee beans and the coffee will have a
slight bittersweet aftertaste.

- Dark Roast Coffee -- These coffee beans range in color from slightly dark to shiny black with an oily surface and a pronounced bitterness. The darker the roast, the less acidity will be found in the coffee beverage.
